Rising food prices, disease-inflicted livestock, a shortage of imported chicken meat in Singapore. The world affects what we eat, and what we eat impacts the world. Are alternative proteins a possible answer? Would you consider them?

Seminar Topic: Is there a future for alternative proteins? - The crucial impact of consumers

Our daily food choices have a huge impact on the environment. Production of meat has a much larger impact compared with the production of vegetable-based proteins. In order to create a food production and supply system that is more sustainable and environmentally friendly, food consumption behavior needs to change. A reduction of meat intake is necessary. The introduction of alternative protein sources (e.g., insects, cultured meat, or microalgae) might be one possibility to replace meat. However this requires that consumers’ acceptance of alternative proteins is increased.

Speaker:

Prof. Michael Siegrist is Professor of Consumer Behavior at ETH Zurich. His research focuses on risk perception, risk communication, acceptance of new technologies, and decision making under uncertainty. He is especially interested in food and consumer behavior. He is involved with the Urban Microalgae-Based Protein Production project at SEC, where he leads the consumer research for developing microalgae-based food products.
